Sheet Pan Herby Chicken
Why I Love It:
Just 5 ingredients, high protein, and barely any cleanup. What’s not to love?
Ingredients:
Golden potatoes
Chicken thighs (double up if you want leftovers!)
6–10 garlic cloves (go wild if you love garlic)
1 sprig fresh rosemary
1 lemon
(Salt, pepper, and olive oil don’t count 😌)
How to Make It:
Preheat your oven to 350°F.
Slice potatoes into ¼-inch rounds and spread them on a sheet pan.
Add chicken thighs to a separate pan.
Drizzle potatoes with olive oil and season with salt + pepper.
Season chicken however you like. (I use Paleo Powder All Purpose.)
Smash peeled garlic cloves and toss them with the potatoes. Spread everything out evenly.
Bake for 35–40 minutes.
Remove from the oven, combine everything into one pan (if not already), strip rosemary leaves over the top, add lemon zest, and squeeze half the lemon over.
Pop it back in the oven for 10 more minutes.
