5-Ingredient High-Protein Lemon Pepper Steak Salad

I’m all about quick, high-protein meals that fit into a busy day. This one comes together in just 30 minutes! Each serving packs around 34 grams of protein, helping me hit my daily goal of at least 100 grams. It’s perfect for keeping muscles strong and supporting balanced blood sugar.

5-Ingredient High-Protein Lemon Pepper Steak Salad 🍋
(Serves 2)

Ingredients:
- 1 lb beef flank steak (I buy pre-sliced stir-fry and choose grass-fed & finished when available)
- 4 oz baby spinach
- Frozen peas or 3 green onions, sliced
- 1 green bell pepper, finely diced
- 4 oz sugar snap peas

Kitchen Staples (items we always keep in the fridge or pantry):
- Olive oil
- Lemon
- Garlic
- Dried oregano
- Ground black pepper
- Salt

Lemon Pepper Dressing:
- Juice of 1 lemon
- Zest of 1 lemon
- 3 garlic cloves, minced
- 1/4 cup olive oil
- 1 1/2 tsp ground black pepper
- 1 1/2 tsp kosher salt

Directions:
1. Prepare the dressing by whisking all dressing ingredients together in a small bowl or jar.
2. In a pan, heat olive oil or grass-fed butter and sauté the sliced steak with salt, pepper, and dried oregano.
3. In a smaller pan, heat olive oil or grass-fed butter and sauté the sugar snap peas until tender-crisp.
4. In a large bowl, combine the spinach, peas (or green onions), and bell pepper. Toss with half of the dressing to start. Add more if needed.
5. Plate the salad, top with steak and snap peas, and enjoy!
