Simple Steak & Pesto Plate
A high-protein weeknight dish that’s full of flavor and perfect for warm summer evenings.
Just 6 ingredients!
Ingredients (Serves 2)
2 steaks of your choice (ribeye, sirloin, or New York strip work beautifully)
4–5 small golden potatoes (optional)
2 Tbsp green pesto
A generous handful of fresh arugula
Shaved or shredded Parmesan cheese
Pine nuts
Directions
Preheat the oven to 425°F.
Prepare the potatoes:
Quarter the golden potatoes and arrange them on a baking sheet.
Drizzle with olive oil and season with sea salt + freshly ground black pepper.
Roast for 30–40 minutes, or until golden and crisp on the edges.
Cook the steaks:
Grill or pan-sear to your desired doneness.
Use an instant-read thermometer for accuracy.
Let rest for at least 5 minutes before slicing.
To plate:
Spread a generous spoonful of pesto in a circle on each plate.
Layer sliced steak over the pesto.
Top with a handful of arugula.
Sprinkle with shaved Parmesan and pine nuts.
Finish with a drizzle of extra virgin olive oil.
Serve with roasted potatoes on the side and enjoy immediately 😃
