Spiced Lamb Flatbread with Picked Veg

Ingredients (Serves 2)

  • 16 oz ground lamb

  • Harissa (mild or spicy—your choice!)

  • ½ small red cabbage, finely shredded (I use a mandoline)

  • 4 whole wheat tortillas or lettuce leaves for wraps

  • Cottage cheese

Pantry staples: Salt, black pepper, red wine vinegar

Directions

  1. Cook the lamb:
    In a skillet over medium heat, cook the lamb with a pinch of salt and pepper.
    Once nearly done, stir in 1 tablespoon of harissa and cook through.

  2. Quick-pickle the cabbage:
    In a small bowl, add shredded red cabbage, a pinch of sea salt, black pepper, and 2 tablespoons of red wine vinegar.
    Use your hands to scrunch the cabbage to soften and quick-pickle it gently.

  3. Assemble your wraps:
    Warm your tortillas or prepare lettuce leaves.
    On each wrap, layer:

    • A sprinkle of pickled cabbage

    • A few dollops of cottage cheese

    • Spiced lamb

    • A drizzle of extra harissa
