Tuna Steak & Crispy Crouton Bake (that’s not boring!)

Ingredients (Serves 2)

  • 2 Wild Caught Tuna Steaks (we buy the frozen ones at HEB)

  • 1 cup of croutons

  • 1 large organic zucchini, diced

  • 1 container of grape tomatoes

  • 4 garlic cloves minced

  • 1/2 cup Parmesan cheese

Pantry staples: Salt, black pepper, olive oil

Directions

Total cook time: 40 minutes.

  1. Prep the Vegetable and Crouton Bake
    Preheat the oven to 385°F. In a glass baking dish, combine the croutons, zucchini, tomatoes, and garlic. Drizzle with a generous amount of olive oil, then season with salt and pepper. Toss everything together. Once the oven is ready, bake for 20 minutes.

  2. Season the Tuna
    On a small plate, season the tuna with your favorite seasoning. We love lemon pepper and salt.

  3. Stir the Vegetable and Crouton Bake
    After 20 minutes, remove the baking dish from the oven. Sprinkle Parmesan over the mixture, stir well, and return to the oven for another 20 minutes.

  4. Cook the Tuna
    Heat a medium pan over medium-high heat and add 2 tablespoons olive oil. Once hot, place the tuna in the pan and sear for 2 minutes. Flip the tuna, cover the pan, and remove it from the heat. Let it rest, covered, for 5 minutes.

  5. Plate It Up
    Serve the tuna alongside the vegetable and crouton bake. Enjoy!
