Ingredients:

  • 16 oz ground turkey (makes 4 burgers)

  • ¼ cup red onion (optional)

  • 5 cloves garlic, minced (optional)

  • Thinly sliced watermelon

  • Thinly sliced radishes

  • Pine nuts

  • Fresh mint leaves

  • Feta cheese

Pantry Staples:
Salt, black pepper, extra virgin olive oil, red wine vinegar

Directions:

  1. In a bowl, combine ground turkey, red onion, garlic, salt, and pepper. Form into 4 patties.

  2. Cook patties in a pan until done.

  3. In a small bowl, mix watermelon and radishes with salt, pepper, 1 tbsp olive oil, and 1 tbsp red wine vinegar.

  4. On a plate, arrange the watermelon and radish salad. Top with pine nuts, mint, and feta. Place two turkey burgers on top. Enjoy!
